Method

    Cook rice noodles according to packet instructions.

    Press and cube tofu, fry until golden.

    Slice vegetables thinly.

    Mix soy sauce, sweet chili and peanut butter into a sauce.

    Stir fry vegetables for 4 minutes.

    Add noodles, tofu and sauce.

    Finish with lime juice and spring onion.
